**Chicken In Fermented Tofu / 麻油腐乳雞**
Ingredients / 材料:
250 g Chicken breast
15 g Cornstarch
45 g All-purpose flour
Some frying oil
Marinade:
1 tbsp Egg, beaten
1 pc Fermented tofu (sesame oil flavoured)
1 tsp Light soya sauce
1/3 tsp Sugar
1/2 tbsp Jiafan rice wine
1/4 tsp White pepper powder
250克 雞胸肉
15克 玉米澱粉
45克 麵粉
適量 食用油
腌料:
1大勺 蛋液
1塊 廣合麻油腐乳
1小勺 生抽
1/3小勺 白糖
1/2 大勺 加飯酒
1/4 小勺 白鬍椒粉
Method / 做法:
1 Blend starch and flour together in a bowl to yield a mixture for coating. Stir all the marinade ingredients in a bowl. Rinse and pat the chicken dry. Cut into inch-sized pieces and pour in prepared marinade. Stir and let marinate for 1 hour until chicken dices fully absorb the sauce.
2 Heat up a pan with oil until hot. Coat the chicken with flour mixture and deep them until golden brown and crispy. Drain and serve with a dish of juice of fermented tofu or peanut sauce.
1 澱粉和麵粉混合入碗作為沾粉備用。腌制材料放入小碗調勻。雞肉洗凈抹乾後切成寸塊,倒入調好的腌汁拌勻放置1小時直到入味。
2 炸鍋入油中火燒熱,將腌入味的雞塊均勻拍上一層沾粉,入油炸至金黃酥脆即可撈出瀝油。隨碟跟上腐乳汁或花生醬。
